Lemon curd, fat and rich in protein

Lemon cheese, 10 people

Ingredients

5 leaf house air

1.5 dl whipping cream

90 g of sugar

90 g egg yolks, pasteurized

130 g egg whites, pasteurized

70 g lemon juice, freshly squeezed

50 g Adozan Protein+

Decoration

1.5 dl whipping cream

Procedure

1. Disassemble Husblas, soak in cold water for at least 10 min

2. Whip the cream into whipped cream


3. Beat egg yolks and sugar until frothy


4. Adozan is added and whipped for 5 minutes

5. Beat egg whites stiff


6. Husblas is melted over a water bath, lemon juice is added to the melted husblas while stirring


7. When the house air and lemon juice are lukewarm, sift it into the egg mixture

8. Fold in the whipped cream and finally carefully fold in the stiffly whipped egg whites
9. Fromage is portioned out and refrigerated
10. Just before serving, decorate with whipped cream

The dish is suitable for freezing and can be stored in the fridge for up to 5 days
